Confetti Summer Salad Recipe
One of our favorite, quick salads this summer is easy to make. The kids love to help.
Ingredients:
5-6 Medium Carrots (washed and peeled if you perfer),
1 can pineapple tidbits (do not drain),
1 can crushed pineapple (do not drain),
1/2 C. sweetened coconut,
Zucchini Squash (approximately 2 Cs),
Yellow Crookneck squash(Approx. 2 Cs).
Shred carrots and squash in food processor (or let the children take turns shredding them onto a plate and put the shreds into a bowl). Add pineapple WITH juice, sprinkle in coconut and enjoy!
Last time we made this, one of our daughters forgot and drained (and drank) the pineapple juice. I added Pineapple, Orange, Banana 100% juice frozen concentrate to the salad (which helps flavor the squash too). The children ate it up! (Poor little Susie has no idea she is eating vegetables or I am sure she wouldn't go near this salad!)
